Italian Salad Wraps

When you're in the mood for salad, but you want something just a little bit more substantial, put it in a wrap! This is not really a recipe, as you can put just about anything in this and it will taste delicious. Mine was of course Italian inspired and it came together in about 10 minutes - perfect for busy workdays. If you want to make this ahead, do not dress the salad, and rather use your dressing as a dip for the wrap to avoid sogginess (Chick-Fil-A style!)

 

Ingredients:

  • Large Burrito wrap (I used 10'') 
  • Romaine lettuce or lettuce of your choosing - chopped
  • Cucumber - chopped
  • Pepperoncini peppers - chopped
  • Cherry tomato- chopped
  • Red onion - thinly sliced
  • Pepper crusted salami (or ham or turkey or any deli meat)
  • Mayo
  • Altruda's Italian Dressing & Marinade
  • Provolone cheese (sliced)

Directions:

  1. Mix romaine, cucumber, pepperoncini, cherry tomato, and onion in a bowl. Generously pour on Altruda's dressing. Mix well.
  2. Spread a thin layer of mayo onto your wrap and lay down a few cheese slices in middle of wrap, followed by a several salami slices.
  3.  Generous heap your salad mixture on top of salami, being careful not to overfill your wrap so that you can still close it. 
  4. Carefully fold your burrito and roll up. Tightly squeeze to secure and slice in half. Enjoy!  Tip: use toothpicks to hold each side together before slicing in the middle
