This kale salad will make lunchtime great again, and it's sooo pretty! The sweet strawberries paired with crunchy walnuts and tangy feta is so delicious and so perfect for these hot spring days. Add some grilled chicken and this becomes a wholesome lunch or eat it as a side dish to your favorite grilled meat.
Serves 4
Ingredients:
- 1 bunch kale - washed and chopped
- 1/2 carton strawberries - chopped
- 4 oz (1/2 small block) feta cheese, crumbled
- 1/2 cup chopped walnuts or pecans
- 1/2 red onion - diced
- 1 teaspoon honey
- 4 oz (about 1/3 bottle) Altruda's Italian Dressing and Marinade
Directions:
Place 4 whole strawberries, Italian dressing, honey and about 1 tbsp of crumbled feta into the blender. Quickly blend until mostly smooth.
Add all remaining ingredients together in a bowl and mix well, pouring the strawberry vinaigrette on top and again mixing well.
