Three Ingredient Creamy Green Goddess Dressing

I'm not exactly sure what a green goddess dressing is, but that's what I'm calling this because it's green and it does in fact seem ethereal. It's so addicting that I have been putting it on literally everything this week. It's refreshing, tangy, and cheesy - and it takes about 2 minutes to come together. I made about one cup for the week in my Nutribullet and I am already out of it. So far I've put it on a basic romaine salad with a sprinkle of parmesan and cracked black pepper on top - tasted almost like a Caesar but even better. I have also drizzled it on top of a caprese salad with fresh mozzarella, basil, and tomatoes and the real kicker was when I used it as a dip for my Publix chicken tender wrap - life changing. There are endless ways to enjoy this; next I'm going to use it as a dip for fried zucchini chips or thick cut potato chips. Read below for the simple breakdown.

Makes about 1 cup 

Ingredients:

  • 6 oz (1/2 bottle) Altruda's Italian Dressing & Marinade
  • 1/3 cup grated parmesan cheese
    • Note you do not need to use Parmigiano Reggiano for this. I like the pre shredded kind better as it has a milder flavor. Just please don't use the dusty shaker kind that lasts 50 years.
  • 1/2 ripe medium or large avocado
  • 2 tbsp water + more to thin dressing

Directions:

Blend these together for a few seconds until creamy consistency is reached. If dressing is too thick, add a tablespoon or so of water until it thins out. Enjoy!!
